Gavurdagi Salatasi (Salad with Pomegranate Extract)

2 tomatoes, finely chopped
2 Kirby cucumbers, finely chopped
4 cornichons, finely chopped
1 onion, finely chopped
4 cloves garlic, finely chopped
? bunch fresh mint or parsley, finely chopped
1 long green pepper, finely chopped
 
Dressing:
 
2 Tbsp. lemon juice
1 tsp. Turkish red pepper
1 Tbsp. sour pomegranate extract
? cup olive oil
? tsp. dried mint
2 oz. walnuts, crushed
1 tsp. salt
 
 
Mix all ingredients except those for the dressing in a large bowl.
 
For the dressing, add salt, lemon juice, red pepper in scales, pomegranate extract, dried mint  walnut and olive oil. Mix well. 
 
Pour sauce over salad and mix.  Garnish with dried mint and serve.
