WARM HUMMUS WITH PINE NUTS


Ingredients:

8 oz.chick peas ( dried ) or 14 oz cooked
3 cups water
1 cup water ( from the beans )

3 cloves garlic,minced
1/3 cup lemon juice
1/2 cup tahini
1/3 cup olive oil
1 cup water , from the beans
1 teasp. salt
1/4 teasp. pepper

For the top

2 Tbsp. butter, melted
2 Tbsp. pignoli nuts
1/8 teasp. cayenne pepper

Directions:

Preheat oven to 400 F degrees.

In a medium saucepan, place the chickpeas.Cover with water. Soak
them overnight.

Rinse the beans and put them back in sauce pan with 3 cups fresh
water.Place it over the stove. Cover with a lid. Simmer it until beans
are cooked stirring occasionally. Remove from the stove.

Strain the beans ( don't discard the water ). Place them in a food
processor or a blender. With the motor running on medium speed
add garlic,lemon juice,tahini, cumin, salt and pepper and gradually add
the oil and 1 cup of water from the beans juice. Mix them well. The
mixture should be creamy and smooth ( if it becomes too thick,add a
little bit more water. )

Spoon mixture into an earthenware pot. Melt the butter in a small
saucepan. Stir in pignoli nuts over a low heat for 2 to 3mis. Remove
from the stove. Stir in cayenne pepper. Pour the mixture over
hummus.

Bake in the oven for about 20 mins to allow it to soak up the butter.

Serve hot with crip pita wedges or French bagette.
