KUNEFE
( Shredded filo pastry filled with custard )

Ingredients :
1lb. (16 oz.) shredded filo pastry
3 sticks clarified butter

For the filling :
1/2 cup semolina flour ( thin )
1 quart milk
1/2 cup sugar
2 egg yolks

For the syrup :
2 1/2 cup sugar
2 cup water
1 Tbsp. lemon juice
1/3 cup Rose water
Slivered almonds to garnish

Directions :
In a sauce pan bring milk to a boil, then, add semolina flour and
sugar stirring constantly. Lower the heat and simmer until it thickens
to a custard consistency. Then, quickly add two eggs stirring
vigorously. Cook for 5 more mins. Remove from stove. Switch it
in another bowl. Set it aside and let it cool.

Preheat the oven to 375 degrees.
Prepare a cookie sheet with parchment paper and place the tart
rings over it.

In a large deep pan break Kadaifi to small pieces. By hand, gently
mix clarified butter well with sheredded filo dough. Place half cup
shredded filo dough in the center of rings.
Press them well. Spread 1/4 cup of semolina custard over.
Cover with 1/2 cup of kadaifi spreading evenly. Repeat with other
molds . Bake it in the oven for 45 mins. or until golden brown.

In the meantime, put all the syrup ingrediens in a medium size bowl.
Except rose water.
Place it over a stove. Bring it to a boil. Stir occasionally . Lower
the heat and simmer for 10 mins.. Remove from the stove .
Stir in rose water . Set aside. Let it cool.
Pour cold syrup over hot Kunefe. Sprinkle almonds over.
Let it sit for several hours or overnight. ( Keep it in the refrigerator. )
Serve cold or at room temperature with whipped cream.
